Delicious, Healthier Chocolate Brownies
Last week we shared Eleanor’s incredible chocolate cake recipe. Today we’ve got another tasty treat – chocolate brownies with a healthier twist.

Ingredients:
200g 70% cocoa dark chocolate
200g self-raising flour
3 tbsp cacao powder
150g coconut sugar
225ml soya milk
75ml vegetable oil
Pinch of salt
Method:

Preheat the oven to 200c/180c fan/Gas mark 6 and line a square tin with oil and baking parchment. Melt half the chocolate, either in short bursts in the microwave or in a heatproof bowl over a pan of simmering water; then leave to cool slightly.

Put the self-raising flour, cacao powder, coconut sugar and pinch of salt in a bowl and mix. Pour in the melted chocolate, soya milk and oil, mixing until you have a smooth batter.

Tip the batter into the lined tin, level with the back of a spoon and sprinkle over the remaining dark chocolate. Bake for 18-20 minutes until the brownie is set around the edges and has a little wobble in the middle. Sprinkle with sea salt and leave to cool.
