  • 1 tsp chia seeds
  • 400ml almond milk (unsweetened)
  • 2 tbsp coconut oil (melted, more for cooking)
  • 2 tbsp maple syrup
  • Handful of blueberries

Instructions:

  1. In a large bowl, blend self-raising flour and chia seeds until smooth.
  2. Pour in almond milk, melted coconut oil, and maple syrup. Mix until a luscious batter forms.
  3. Let the batter rest for 4-5 minutes to thicken.
  4. Warm coconut oil in a pan over medium heat.
  5. Spoon the batter onto the pan, sprinkle fresh blueberries, and cook until the bottom is set (3-5 minutes).
  6. Flip and cook the other side to golden perfection!

Banana Pancakes: Oat-infused Bliss

Ingredients:

  • 100g oats
  • 200ml almond milk (unsweetened)
  • 80g ground almonds
  • 2 overripe bananas (mashed)
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds
  • 2 tsp ground cinnamon
  • 1 tbsp coconut oil

Instructions:

  1. Pulse oats in a food processor to form a dusty flour.
  2. Combine oat flour, ground almonds, chia seeds, and cinnamon in a bowl.
  3. Add almond milk, mashed bananas, and maple syrup. Mix until a delightful pancake batter forms.
  4. Let it rest for 10-15 minutes to thicken.
  5. Heat coconut oil in a frying pan over medium heat.
  6. Cook the pancakes until they’re golden brown and ready to be devoured!
